After a long hectic day, my daughter suddenly demands me of cookies. And like every mom,i too tried to fulfill her wish. And with a keen interest in baking and learning new things, i stepped on to bake cookies. Eggless and loaded with homemade butter, what else one can ask for!! So here are my first ever cookies.. :)
Recipe goes as follows:
Ingredients:
Maida/Whole wheat flour(for a healthier version)- 1 cup
Baking soda- a pinch
salt- a pinch
Sugar- 3 tbsp
Curd- 2 tbsp
Butter(unsalted)- 2 tbsp( u can use any oil to replace butter)
vanilla essence-1 tsp
vinegar- 1/2 tsp
Milk- 2-3 tbsp(so as to get a sticky consistency)
Choco Chips- a handful
Cashewnuts-for garnish
Method:
Preheat your oven to 200^C for 10 minutes.
Add all the liquid ingredients in a bowl except milk.
Add sugar and whisk till sugar dissolves
Sieve flour and add to the liquid mix, and add soda and all dry ingredients.
Mix well with hands till you get a sticky but firm dough. Mine went a bit loose and hence got flat cookies. You can add milk if the dough is hard. But dont 'knead' the dough,just mix!
Grease a baking tray with oil or butter and grease your fingers as well!
Place lemon sized cookies on the tray and press a little. Stick a cashew on each.
Bake in the oven for 20-25 minutes for 200^C. Keep an eye on your cookies,if they start turning golden..then turn off the oven.
Remove on a wire rack. Let them cool down. They will get crispier as they cool down :)
